Courgette & Herb Fritters with a Poached Egg

These little fritters are mostly courgette, held together with a bit of flour and egg, and fried until golden. Topped with a poached egg, they're a proper breakfast that feels like you've made an effort. You have, but not a stressful one.
Ingredients (Serves 1, makes 4–5 fritters):
- 1 small courgette, grated
- ½ tsp salt
- 1 egg
- 30g flour (any kind)
- A handful of fresh herbs (parsley, dill, chives), chopped
- Black pepper
- Olive oil for frying
- 1 extra egg, for poaching
Method:
- Put the grated courgette in a colander, sprinkle with the salt, and leave for 10 minutes. Squeeze out as much liquid as possible.
- In a bowl, mix the courgette, 1 egg, flour, herbs, and black pepper.
- Heat a generous drizzle of olive oil in a non-stick frying pan over medium heat.
- Spoon tablespoon-sized dollops of the mixture into the pan. Flatten slightly. Cook for 3–4 minutes per side until golden.
- Meanwhile, poach the extra egg in simmering water for 3–4 minutes.
- Serve the fritters topped with the poached egg.
Why it's gut-friendly: Courgette is hydrating and gentle on the stomach. Eggs provide high-quality protein. Fresh herbs add gentle digestive support. A light, savoury breakfast.
