Coconut & Lime Chia Pudding

Method:
- In a jar or bowl, whisk together the coconut milk, maple syrup, lime zest, lime juice, and salt.
- Stir in the chia seeds until well combined. Wait 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate overnight, or for at least 4 hours.
- In the morning, give it a stir. Top with fresh fruit and toasted coconut flakes.
