Coconut & Lime Chia Pudding

Coconut & Lime Chia Pudding

This tastes like dessert. I need you to know that upfront. It's creamy and coconutty and the lime makes it sing. It feels like a treat.

It's also packed with fibre, healthy fats, and omega-3s. The chia seeds form a gel that soothes your digestive tract and feeds your good gut bacteria. The coconut milk is gentle on the stomach. It's basically a hug in a jar.

Make it the night before. Wake up to something that feels indulgent but is actually doing your gut a favour. This is the kind of deception I can get behind.

This tastes like dessert. It's not dessert. It's breakfast. And it's packed with fibre, healthy fats, and absolutely zero morning effort.

Why it's gut-friendly: Chia seeds are fibre superstars. They absorb liquid and form a gel that soothes the digestive tract and feeds good gut bacteria. Coconut milk provides healthy fats that are gentle on the stomach.

Ingredients (Serves 1):

  • 3 tbsp chia seeds
  • 200ml light coconut milk (the tinned kind, shaken well)
  • 1 tsp maple syrup or honey
  • Zest and juice of ½ lime
  • A pinch of salt

To serve:

  • Fresh mango or pineapple chunks
  • Toasted coconut flakes

Method:

  1. In a jar or bowl, whisk together the coconut milk, maple syrup, lime zest, lime juice, and salt.
  2. Stir in the chia seeds until well combined. Wait 5 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate overnight, or for at least 4 hours.
  4. In the morning, give it a stir. Top with fresh fruit and toasted coconut flakes.
