Banana & Walnut Oat Pancakes (Two-Ingredient Style)

These are not proper pancakes. They don't require flour, eggs, milk, or any of the usual pancake paraphernalia. They're just banana, oats, and a pinch of salt. They're soft, slightly chewy, and taste like a treat without the sugar crash. I make them when I want pancakes but can't face the faff. They take five minutes. They're brilliant.
Ingredients (Serves 1, makes 3–4 small pancakes):
- 1 ripe banana
- 50g rolled oats
- Pinch of salt
- ¼ tsp cinnamon (optional)
- A handful of chopped walnuts
- Coconut oil or butter for frying
Method:
- Mash the banana thoroughly in a bowl with a fork.
- Add the oats, salt, and cinnamon. Mix until well combined. Let it sit for 5 minutes—the oats will absorb some moisture.
- Stir in the chopped walnuts.
- Heat a small non-stick pan over medium heat. Add a tiny bit of coconut oil or butter.
- Spoon tablespoon-sized dollops of the mixture into the pan. Flatten slightly with the back of the spoon.
- Cook for 2–3 minutes per side, until golden and firm.
- Serve warm. They don't need syrup—the banana is sweet enough.
Why it's gut-friendly: Bananas provide natural sweetness and potassium. Oats are packed with prebiotic fibre. Walnuts add omega-3s, which are anti-inflammatory. No refined sugar, no flour, no nonsense.
