Banana & Walnut Baked Oats

This is a single-serving baked oatmeal situation. Soft, spoonable, and barely sweet, with chunks of banana and crunchy walnuts throughout. It tastes like banana bread but is ready in twenty minutes and is significantly better for your gut.
Ingredients (Serves 1):
- 50g rolled oats
- ½ tsp baking powder
- ½ tsp cinnamon
- Pinch of salt
- 1 ripe banana, half mashed and half sliced
- 1 egg
- 80ml milk of choice
- A handful of chopped walnuts
Method:
- Preheat oven to 180°C (160°C fan). Lightly grease a small ovenproof dish or ramekin.
- In a bowl, mix the oats, baking powder, cinnamon, and salt.
- Stir in the mashed banana, egg, and milk.
- Pour into the dish. Top with the sliced banana and walnuts.
- Bake for 20–25 minutes until golden and set.
- Eat warm.
Why it's gut-friendly: Oats provide prebiotic fibre. Bananas add potassium and natural sweetness. Walnuts are rich in omega-3s, which are anti-inflammatory.
