Speedy Coconut Lentil Soup

This is the soup for when you need something warm and creamy but can't face a long ingredient list. Red lentils, coconut milk, ginger, and stock. That's it. It comes together in twenty minutes and tastes like you made an effort.
Ingredients (Serves 2–3):
- 100g red lentils, rinsed
- 1 x 400ml tin of coconut milk
- 1 tsp fresh ginger, grated
- 500ml vegetable stock
- Juice of ½ lime (optional)
Method:
- Put the lentils, coconut milk, ginger, and stock in a pan.
- Bring to a simmer and cook for 15–20 minutes until the lentils are soft.
- Blend if you want it smooth. Squeeze in the lime juice. Season.
Why it's gut-friendly: Red lentils are easy to digest and packed with fibre. Coconut milk is gentle on the stomach. Ginger is anti-inflammatory.
