Mozzarella & Tomato Baked Gnocchi

Gnocchi is comfort food that cooks in three minutes. Toss with cherry tomatoes, olive oil, and torn mozzarella, then bake until bubbly and golden. It's a five-ingredient dinner that feels like a restaurant meal.
Ingredients (Serves 2):
- 500g fresh gnocchi
- 200g cherry tomatoes, halved
- 125g fresh mozzarella, torn
- 2 tbsp olive oil
- A handful of fresh basil
Method:
- Preheat oven to 200°C (180°C fan).
- Toss the gnocchi (no need to pre-boil if it's fresh) and tomatoes with olive oil in a baking dish.
- Bake for 15 minutes. Scatter the mozzarella over the top and bake for another 5–8 minutes until melted and golden.
- Scatter with basil and eat immediately.
Why it's gut-friendly: Mozzarella is a fresh, easily digestible cheese. Tomatoes are rich in lycopene. Basil is anti-inflammatory. Olive oil supports the gut lining.
