Mozzarella & Tomato Baked Gnocchi

Gnocchi is comfort food that cooks in three minutes. Toss with cherry tomatoes, olive oil, and torn mozzarella, then bake until bubbly and golden. It's a five-ingredient dinner that feels like a restaurant meal.

Ingredients (Serves 2):

  • 500g fresh gnocchi
  • 200g cherry tomatoes, halved
  • 125g fresh mozzarella, torn
  • 2 tbsp olive oil
  • A handful of fresh basil

Method:

  1. Preheat oven to 200°C (180°C fan).
  2. Toss the gnocchi (no need to pre-boil if it's fresh) and tomatoes with olive oil in a baking dish.
  3. Bake for 15 minutes. Scatter the mozzarella over the top and bake for another 5–8 minutes until melted and golden.
  4. Scatter with basil and eat immediately.

Why it's gut-friendly: Mozzarella is a fresh, easily digestible cheese. Tomatoes are rich in lycopene. Basil is anti-inflammatory. Olive oil supports the gut lining.
