Miso & Ginger Salmon Parcels

This sounds fancy but takes five minutes to prep. A salmon fillet, a smear of miso, a slice of ginger, and a drizzle of sesame oil, wrapped in foil and baked. It steams gently, staying incredibly moist.
Ingredients (Serves 1):
- 1 salmon fillet
- 1 tsp white miso paste
- 2 slices of fresh ginger
- 1 tsp sesame oil
- 1 spring onion, sliced (optional)
Method:
- Preheat oven to 200°C (180°C fan).
- Place the salmon on a square of foil. Smear the miso on top, lay the ginger slices over it, and drizzle with sesame oil.
- Wrap the foil loosely around the salmon, sealing the edges.
- Bake for 15–18 minutes. Scatter with spring onion if using.
Why it's gut-friendly: Salmon is rich in omega-3s. Miso is fermented, providing probiotics. Ginger is anti-inflammatory and aids digestion.
