Courgette & Feta Omelette

A three-minute dinner. Grated courgette folded into a soft omelette with salty feta. It's light, savoury, and uses up whatever courgette is languishing in the fridge.

Ingredients (Serves 1):

  • 2 eggs
  • 1 small courgette, grated and squeezed dry
  • 30g feta, crumbled
  • A handful of fresh mint or dill (optional)
  • Olive oil for frying

Method:

  1. Whisk the eggs. Stir in the courgette, herbs if using, and a pinch of salt and pepper.
  2. Heat a little oil in a small non-stick pan. Pour in the egg mixture.
  3. Cook gently until nearly set. Scatter the feta over one half, fold, and slide onto a plate.

Why it's gut-friendly: Eggs are a complete protein. Courgette is hydrating and gentle. Feta is a fermented cheese, providing probiotics.
