Butter Bean & Rosemary Mash on Sourdough

This is what I make when I want something warm, creamy, and savoury in under five minutes. Butter beans mashed with rosemary, garlic, and olive oil, piled onto thick sourdough toast. It's like mashed potatoes, but with more fibre and less effort.

Ingredients (Serves 1):

  • ½ x 400g tin of butter beans, rinsed and drained
  • 1 tbsp olive oil
  • 1 small garlic clove, crushed
  • ½ tsp dried rosemary (or 1 tsp fresh, chopped)
  • 1 thick slice of sourdough bread

Method:

  1. Warm the beans, oil, garlic, and rosemary in a small pan over low heat for 2–3 minutes.
  2. Mash roughly with a fork. Season with salt and pepper.
  3. Toast the sourdough. Pile the warm mash on top.

Why it's gut-friendly: Butter beans are packed with soluble fibre. Rosemary is anti-inflammatory. Sourdough is fermented and easier to digest than regular bread.
