Banana & Egg Pancakes (Two Ingredients)

These are not proper pancakes. They're soft, slightly sweet, and miraculously made from just banana and egg. That's it. They're the breakfast you make when the cupboard is bare and you need something warm in five minutes.

Ingredients (Serves 1, makes 4–5 small pancakes):

  • 1 ripe banana
  • 2 eggs
  • A tiny pinch of salt
  • Coconut oil or butter for frying

Method:

  1. Mash the banana thoroughly with a fork. Whisk in the eggs and salt until you have a loose batter.
  2. Heat a small non-stick pan with a little oil over medium heat.
  3. Spoon tablespoon-sized dollops into the pan. Cook for 2–3 minutes per side until golden.
  4. Serve as they are. They don't need syrup.

Why it's gut-friendly: Bananas are gentle on the stomach and provide potassium. Eggs are a complete protein, rich in choline for brain health. No flour, no sugar, no fuss.
